Roasted Baby Beets
½ lb Small Fresh Beets (or larger beets cut into 2-3"pieces)
TBL Extra Virgin Olive Oil
- 1-2 tsp Maine-Sweet Pepper
- 1 TBL Balsamic Vinegar
Pre-heat oven 375°
Wash and trim the roots of the beets. Simmer for about ½ hour; rinse under cold water. While you’re rinsing, gently peel the outer skin off the beets.
